Acai Bowl

I love a good Acai Bowl. It gets expensive to go out & order them. I decided to look into what is commonly put into them & come up with a recipe! This stays good for one to two days in an airtight container in the refrigerator.

Ingredients:

  • The Bowl:
    • 1 packet organic unsweetened Acai
    • 1 ¼ cups frozen mixed berries​
    • ​1 small banana
    • ½ cup unsweetened coconut, or almond milk
    • 1 heaping tablespoon cashew butter, can substitute almond butter
    • 2 Tablespoons chia seeds
    • 2 scoops collagen peptides (optional)
    • 1 Tablespoon coconut oil
  • Toppings:
    • Fresh Fruit of choice
    • Coconut Shavings
    • Chia Seeds

Preparation:

  1. In the pitcher of a high-speed blender, add all of the ingredients.
  2. Blend on medium-high for 1 minute (or until it is smooth).
  3. Pour into a bowl and top it with with your toppings of choice!
