I love a good Acai Bowl. It gets expensive to go out & order them. I decided to look into what is commonly put into them & come up with a recipe! This stays good for one to two days in an airtight container in the refrigerator.
Ingredients:
- The Bowl:
- 1 packet organic unsweetened Acai
- 1 ¼ cups frozen mixed berries
- 1 small banana
- ½ cup unsweetened coconut, or almond milk
- 1 heaping tablespoon cashew butter, can substitute almond butter
- 2 Tablespoons chia seeds
- 2 scoops collagen peptides (optional)
- 1 Tablespoon coconut oil
- Toppings:
- Fresh Fruit of choice
- Coconut Shavings
- Chia Seeds
Preparation:
- In the pitcher of a high-speed blender, add all of the ingredients.
- Blend on medium-high for 1 minute (or until it is smooth).
- Pour into a bowl and top it with with your toppings of choice!
