Molten Lava Cake

One of my favorite desserts to get growing up was Molten Lava Cakes. I made this for my dad’s birthday & it was so good and rich. I would recommend using milk chocolate.

Ingredients:

  • 1 stick unsalted butter
  • 6 ounces bittersweet chocolate
  • 2 eggs
  • 2 egg yolks
  • 1/4 cup sugar
  • Pinch of salt
  • 2 Tablespoons all-purpose flour

Preparation:

  1. Preheat the oven to 450℉. Butter and lightly flour four 6-ounce ramekins. Tap out the excess flour. Set the ramekins on a baking sheet.
  2. In a double boiler melt the butter & chocolate.
  3. In a medium bowl, beat the eggs, eggs yolks, sugar and salt at high speed until thickened and pale.
  4. Whisk the chocolate until smooth. Quickly fold it into the egg mixture along with the flour. Spoon the batter into the prepared ramekins and bake for 12 minutes. Let the cakes cool in the ramekins for 1-3 minutes. Cover each with an inverted plate. Carefully turn each one over, let stand for at least 10 seconds & then slowly remove the ramekin.
  5. Top it off with a little powdered sugar & a strawberry on the side.

Notes:

  • If you make the batter ahead of time, just make sure to bring it to room temperature before baking it.
  • Cooking time can vary, so just keep your eye on them! The best rule of thumb to tell if they are done is if the sides of the cakes are firm & the middle is soft.
