I love this dish so much. It’s colorful & tasty. The mango salsa is so good & I could honestly eat it with some chips as an appetizer!
Ingredients:
- Four 6-ounce salmon fillets
- 1 teaspoon garlic powder
- 1 teaspoon chili powder
- Salt & pepper to taste
- Juice of 1 lime
- Mango Salsa
- 2-3 mangoes, diced
- ½ red bell pepper, diced
- ½ red onion, diced
- 1 small jalapeño, seeded and finely chopped
- ¼ cup packed cilantro leaves, roughly chopped
Preparation:
- In a medium bowl combine the mangoes, red bell peppers, onions, jalapeños, & cilantro. Set aside.
- In a small bowl coming the garlic powder, chili powder, salt, and pepper. Rub this mixture into the salmon fillets. Grill over medium heat for about about 6-8 minutes on each side.
- Squeeze some fresh lime juice over grilled salmon, then top with mango salsa and serve.

- Makes enough Mango Salsa for probably 8 fillets
