Grilled Salmon with Mango Salsa

I love this dish so much. It’s colorful & tasty. The mango salsa is so good & I could honestly eat it with some chips as an appetizer! 

Ingredients:

  • Four 6-ounce salmon fillets
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • Salt & pepper to taste
  • Juice of 1 lime
  • Mango Salsa
    • 2-3 mangoes, diced
    • ½ red bell pepper, diced
    • ½ red onion, diced
    • 1 small jalapeño, seeded and finely chopped
    • ¼ cup packed cilantro leaves, roughly chopped

Preparation:

  1. In a medium bowl combine the mangoes, red bell peppers, onions, jalapeños, & cilantro. Set aside.
  2. In a small bowl coming the garlic powder, chili powder, salt, and pepper. Rub this mixture into the salmon fillets. Grill over medium heat for about about 6-8 minutes on each side.
  3. Squeeze some fresh lime juice over grilled salmon, then top with mango salsa and serve.

  • 4 Servings
  • Makes enough Mango Salsa for probably 8 fillets
