Banana Chocolate Chip Muffins

Ingredients:

  • 4 ripe bananas, medium
  • 1/3 cup melted butter cooled
  • 2/3 cup sugar or sugar of choice
  • 1 egg
  • 1 teaspoon vanilla
  • 1 teaspoon baking soda
  • A pinch of salt
  • 1 1/2 cups all purpose flour (or Bob’s Red Mill Gluten-Free Flour)
  • 1 cup Mini Semisweet chocolate chips

Preparation:

  1. Preheat the oven to 350°F.
  2. Grease your muffin tins
  3. Peel bananas and throw them in a big bowl with the melted butter and smash it all together with a fork.
  4. Keep blending until the mixture is creamy and smooth, not chunky.
  5. Add sugar, egg and vanilla and mix just until combined.
  6. Stir in salt and baking soda.
  7. Add the flour & chocolate chips and mix until just combined. Do not overmix!
  8. Divide into muffin tins.
  9. Bake until cake tester or toothpick pulls out cleanly for about 18-20 minutes.
