This recipe is from The Half Baked Harvest Blog. I have included the recipe below. The Snowman Marshmallows are how I did it, but if you would like a challenge go to the Half Baked Harvest link below for the original recipe.
Ingredients:
- 4 1/2 cups canned coconut milk (3 cans)
- 1/2 cup semi-sweet chocolate chips
- 1/4 cup unsweetened cocoa powder
- 1/4 cup real maple syrup
- 1 Tablespoon vanilla extract
- 1 pinch flaky salt
- Coconut whipped cream, for topping
- Grated cinnamon or chocolate shavings
Snowman Marshmallows:
- Regular marshmallows
- Pretzel sticks
- Melted chocolate
Preparation:
- Add the coconut milk, chocolate chips, cocoa powder, maple syrup, vanilla, and a pinch of salt to a large pot. Place the pot over medium heat until the milk is scalding, but not boiling. Be sure to stir the pot often to make sure nothing is sticking to the bottom and burning.
- Once the hot cocoa is steaming, ladle into mugs, dollop with whipped cream, and top with mar mallows, if desired. Drink and enjoy!
Snowman Marshmallows:
- Slide 3 marshmallows on the pretzel stick. Melt some chocolate. Place it into a ziplock bag, snip the end off, and decorate away! Create the two eyes, a smile, and three buttons.
- Place in the fridge for about 10 minutes, or until the chocolate hardens.
