Hello!! This was my first attempt at a Tok Tok recipe. I wish the people posting them would also post the exact recipe. I watched the video over and over again and figured it all out so you don’t have to! This one is a great one to meal prep for lunch during the week. It gets in a ton of vegetables and chicken!
Ingredients:
- 1 Tbsp Olive Oil
- 1 yellow onion
- 5 cloves garlic
- 1 Tbsp butter
- 2 cups orzo
- 4 cups chicken broth
- 3 bell peppers (2 yellow, 1 orange)
- 2 jalapeños, seeded & chopped
- 1 head broccoli
- 1 cup parmesan
- Fresh basil
- 3 grilled chicken breasts
Preparation:
- Grill some chicken breasts and set aside. I just add salt and pepper on mine!
- Heat the olive oil in a large nonstick skillet.
- Add the minced onion and garlic.
- When onion & garlic are soft and fragrant add 1 Tbsp of butt and orzo. Toast them until golden brown.
- Chop up bell peppers & jalapeños. Set aside.
- Once orzo is toasted add chicken broth. Bring to a boil.
- Once boiling, bring it down to a simmer and cover. About 20 minutes.
- Once chicken broth is mostly gone, Add a quarter cup of water.
- Then add bell peppers & jalapeños
- Cover again for 5 minutes.
- Then add the broccoli. Cook for another 10-15 minutes.
- Remove from heat and add cheese, basil, then shredded chicken.
- Serve and enjoy!
