Chicken Basil Orzo

Hello!! This was my first attempt at a Tok Tok recipe. I wish the people posting them would also post the exact recipe. I watched the video over and over again and figured it all out so you don’t have to! This one is a great one to meal prep for lunch during the week. It gets in a ton of vegetables and chicken!

Ingredients:

  • 1 Tbsp Olive Oil
  • 1 yellow onion
  • 5 cloves garlic
  • 1 Tbsp butter
  • 2 cups orzo
  • 4 cups chicken broth
  • 3 bell peppers (2 yellow, 1 orange)
  • 2 jalapeños, seeded & chopped
  • 1 head broccoli 
  • 1 cup parmesan
  • Fresh basil
  • 3 grilled chicken breasts

Preparation:

  1. Grill some chicken breasts and set aside. I just add salt and pepper on mine!
  2. Heat the olive oil in a large nonstick skillet.
  3. Add the minced onion and garlic.
  4. When onion & garlic are soft and fragrant add 1 Tbsp of butt and orzo. Toast them until golden brown.
  5. Chop up bell peppers & jalapeños. Set aside.
  6. Once orzo is toasted add chicken broth. Bring to a boil.
  7. Once boiling, bring it down to a simmer and cover. About 20 minutes.
  8. Once chicken broth is mostly gone, Add a quarter cup of water.
  9. Then add bell peppers & jalapeños
  10. Cover again for 5 minutes.
  11. Then add the broccoli. Cook for another 10-15 minutes.
  12. Remove from heat and add cheese, basil, then shredded chicken.
  13. Serve and enjoy!
