Burger Bowl (Whole30)

Ladies and gentlemen, here is another healthy meal for ya! I have been on a Whole30 recipe kick. I have been searching for better meals to be able to prep for lunches. This one is PERFECT! I would just separate it into two Tupperware containers. One with the fries and meat. This one should be microwave safe. The other one would have the salad and the bacon all crumbled up. Boom. Easy

 

Ingredients:

  • Fries:
    • 2 large Russet Potatoes, peeled and sliced into fry shapes about 1/2” thick
    • 1 Tablespoon Avocado Oil or Olive Oil
    • 1/2 teaspoon sea salt
    • 1/4 teaspoon black pepper
    • 1/2 teaspoon garlic powder
  • Sauce:
    • 1/3 cup Primal Kitchen Mayo
    • 1 Tablespoon Primal Kitchen Dijon Mustard
    • 3 Tablespoons ketchup
    • 1 Tablespoon chopped dill pickles, no sugar added for Whole30
    • 1/2 teaspoon garlic powder
  • Bowl:
    • 6 slices paleo friendly bacon, no sugar added for Whole30 (HEB Brand Here)
    • 1 lb Ground Beef, 80% lean grass fed beef
    • 1/2 teaspoon sea salt
    • Large pinch black pepper
    • 1/2 teaspoon garlic powder
    • 4 cups Hearts of Romaine
    • 1 cup Cherry Tomatoes, sliced
    • 1 medium Purple Onion thinly sliced, optional
    • Sliced Dill Pickles, no sugar added for Whole30
    • 1 large avocado

Preparation:

  1. Preheat the oven to 425°F. Cook the bacon for 13-16 minutes, or until it’s cooked to preference.
  2. Not the second sheet lined with parchment paper, toss the sliced potatoes in the oil and sprinkle all over with the seasonings. Spread out on the baking sheet so that no two fries touch, this will helps them roast very crispy. Roast them in the preheated oven for 30 minutes or until golden brown and crisp.
  3. While the fries and bacon bake, make the special sauce. Whisk all ingredients together in a small bowl until well combined and set aside.
  4. Heat a large skillet over medium high heat and drizzle a little bit of oil in the skillet. Once hot, add the beef and sprinkle with salt, pepper and garlic powder. Cook for about 2-3 minutes, stirring and breaking up lumps until browned.
  5. This recipe will make 4-6 burger bowls. To assemble the bowls divide the greens between the bowls and top with tomatoes, onions, pickles, the beef, cooked bacon and hot fries. Lastly, slice the avocado and divide between the bowls and serve drizzled with the special sauce.
