Chicken Salad (Whole30)

Here is another good meal prep recipe for lunch! I eat my Chicken Salad with a side of steam broccoli or green beans!

 

Ingredients:

  • 2 cups Shredded Rotisserie Chicken
  • 2 Tbsps Celery, finely chopped
  • 2 Tbsps Onion, finely chopped
  • 3-4 Tbsps Chopped Pecans (or walnuts)
  • 10-12 Red Grapes, quartered
  • 1/3 cup Primal Kitchen Mayo
  • Salt and pepper to taste

 

Preparation:

  1. Mix chicken, celery, onion, nuts, and grapes in a medium bowl.
  2. Add mayo until it reaches your desired moisture. Add in the salt and pepper to taste.
  3. Enjoy!!
