Here is another good meal prep recipe for lunch! I eat my Chicken Salad with a side of steam broccoli or green beans!
Ingredients:
- 2 cups Shredded Rotisserie Chicken
- 2 Tbsps Celery, finely chopped
- 2 Tbsps Onion, finely chopped
- 3-4 Tbsps Chopped Pecans (or walnuts)
- 10-12 Red Grapes, quartered
- 1/3 cup Primal Kitchen Mayo
- Salt and pepper to taste
Preparation:

Mix chicken, celery, onion, nuts, and grapes in a medium bowl.

Add mayo until it reaches your desired moisture. Add in the salt and pepper to taste.
