This is a perfect healthy meal prep lunch recipe! I personally don’t do diets. While Whole30 does take out some things, I truly don’t feel super restricted. I got so full on this dish. Perfect light meal to get me through the rest of the work day!
Ingredients:

Parchment Paper

1 Head Iceberg Lettuce

2 Tbsps Primal Kitchen Ranch

½ to 1 tsp Primal Kitchen Mustard

4 to 5 ounces Rotisserie Chicken

Homemade Pickled Red Onions

½ avocado, thinly sliced

3 to 5 cherry tomatoes, sliced

Kosher salt

3 to 4 pepperoncini peppers, whole or sliced
Preparation:

Place a long piece of parchment paper on a flat surface. Cut out the hard core of the iceberg. Carefully separate 4 to 6 large iceberg lettuce leaves and place them flat on the parchment paper, with the edges overlapping and the ends pointing toward the middle.

In the center of the lettuce, spread Primal Kitchen’s Ranch and Mustard. Layer the chicken breast, marinated red onions, avocado, cherry tomatoes, pepperoncini peppers, and sprinkle a pinch of salt. Make sure everything is centered.

Carefully, and using both of your hands, begin to roll it up into a wrap. Use the parchment paper to help you roll, but continuously pull the paper out. Fold the edges inward while rolling, until the sandwich is completely wrapped, like a burrito. Using a serrated knife, slice the sandwich in half and enjoy!
