Carrot Soufflé

Now this recipe is near & dear to my heart. This came from my Aunt B years ago. At first I was skeptical on what the taste & consistency would be like, but oh boy this is one of my favorite side dishes ever. My family even fights over the last bite at Thanksgiving!

Ingredients:

  • 1 pound carrots
  • 1 cup sugar
  • ½ cup butter (melted)
  • 3 Tablespoons flour
  • 1 teaspoon baking powder
  • 3 eggs
  • 1 teaspoon vanilla

Preparation:

  1. Chop and cook carrots until tender
  2. Set aside carrots and let cool.
  3. Mix all ingredients in blender until smooth
  4. Pour into greased dish
  5. Bake at 350℉ for 45 minutes.
